The very first time I ever had homemade carrot cake was when my husband and I went taste testing cakes for our wedding. I went in with one goal: CHOCOLATE. I really had no need for any other dessert in my life, and I thought carrot cake would be an odd choice for a wedding. But marriage is about compromise, and I wanted to get this right, from the start. After all, what was the harm in just testing them? 
It was delicious! Now, we understood that not everyone would be fond of carrot cake, and some may even be allergic, so we had half of the tiers made in chocolate with buttercream frosting, and half in carrot cake. But we both loved it so much, that we made sure our 1st year anniversary cake was carrot!

When I tell you that I love chocolate, I mean, I turn down fruit filled cakes and pies all the time, because I don’t like wasting calories on desserts with no chocolate. I’m a fanatic. So, when I tell you, that this homemade carrot cake is, hands down, the best cake I make, that is a fact. It surprised me too! But if you try it, I promise you will love it! I decided, several years ago, that I needed to figure out how to make a homemade carrot cake we loved, and it has remained an anniversary tradition ever since!

 

We celebrate 11 years of marriage tomorrow! My Catch-a-Man Cornbread is what earned me his name, and I’m pretty sure that this cake is what keeps him around. 😉
