Our oldest daughter turns 8 next Wednesday! And while she enjoys her special day in school with her classmates, I will be making this easy treat for later! There was a time when I had all of my babies home with me. I even homeschooled the older two their first 2 years of school. Birthdays always got two fun celebrations. They would get their special day with us, even in the middle of the week, complete with a day off from school, because, well, I was the boss. Then, they’d have their extended family celebration on the closest weekend to their actual birthday. I, of course, made cake for both.

Then we had our 4th child, and things got harder. We ended up sending the older two off to school, and I cried and cried. Last May, Chastity’s was the first birthday that came up while they were in school, and it was really hard on me. I don’t think Chastity cared. She enjoyed being celebrated in school, and being a special teacher’s helper for the day. But Mommy cared. Mommy missed them. Mommy missed having them all to herself on their special days. I was in search of something quick and simple that could still be a special birthday treat on these busy school and homework riddled birthdays.

Y’all, I never buy cake mixes. Never, ever, ever. But occasionally they come with a deal at the store for free. This mama doesn’t turn down free things. So, while I was grieving the loss of total birthday bliss control, and happened upon one of those free cake mixes, in my cupboard just begging to be used, I had an idea for my children who love pudding! And sprinkles! Because, well, who doesn’t love sprinkles? Crazy people, that’s who.

And the spoon? Mickey Mouse was my spoon as a child, and our 3 oldest children (#4 doesn’t understand the thrill yet) always argue over whose turn it is to use him. So it is a given that the birthday child gets his or her pudding with Mickey. It’s a magical moment which I hope lives on into their adult lives. *Fingers crossed* 😉
